Cooking Process
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a Dutch oven over medium heat. Season short ribs with salt and pepper, then sear for 3-4 minutes on each side.
- Remove ribs and sauté chopped onions and minced garlic in the same pot for about 5 minutes until onions are soft.
- Stir in tomato paste and cook for 1 minute. Pour in red wine and let it simmer for 5 minutes, then add beef broth.
- Return short ribs to the pot, ensuring they are submerged in sauce. Add fresh thyme and rosemary.
- Cover and bake in the oven for about 3 hours until tender.
- Transfer ribs to a plate and ladle sauce over the top. Serve with mashed potatoes or bread.
Notes
Allow the braised short ribs to rest overnight for deeper flavor.
