- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to prevent sticking and for easy cleanup.
- Whisk together the dry ingredients. In a medium bowl, combine the all-purpose flour, baking powder, ground nutmeg, and cinnamon.
- Cream the butter and sugars. In a large bowl, beat the softened unsalted butter with the granulated and brown sugars until light and fluffy, about 3 minutes.
- Incorporate eggs and vanilla. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Fold in dry ingredients. Gradually mix the dry ingredients into the wet mixture until just combined.
- Drop onto baking sheets. Use a cookie scoop or spoon to drop rounded balls of dough onto the prepared sheets, placing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers remain soft.
- Cool completely. Allow cookies to cool on the baking sheets for a few minutes before transferring them to wire racks.
