How to Make Easy Chicken and Leek Pie
- Preheat your oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick spray.
- Heat butter or olive oil in a skillet over medium heat. Add the sliced leeks and boneless chicken thighs, cooking for 7-10 minutes until the chicken is golden brown and the leeks are tender.
- Stir in the heavy cream and thyme, letting the mixture simmer for about 5 minutes until it thickens slightly. Season with salt and pepper.
- Roll out the puff pastry on a floured surface. Pour the creamy filling into your prepared baking dish, then cover it with the pastry. Cut a few steam slits in the pastry.
- Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and flaky.
- Cool the pie slightly before slicing. Serve with roasted vegetables or a fresh salad.
