- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Season the chicken thighs with olive oil, salt, pepper, and fresh thyme.
- Cut the cabbage into wedges and mix together Dijon mustard and honey. Brush the glaze onto the cabbage wedges.
- Place the cabbage on the baking sheet alongside the chicken and roast for 35-40 minutes.
- Let the chicken rest for about 5 minutes before serving with the mustard-glazed cabbage.
