Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or nonstick spray.
- In a large mixing bowl, combine black beans, bell peppers, red onion, corn, olive oil, and taco seasoning. Toss gently.
- Spread the veggie mixture evenly on the prepared baking sheet.
- Roast in the oven for 20 minutes, stirring halfway through.
- While the filling is roasting, warm the tortillas in a skillet or in foil in the oven.
- Once the veggies are roasted, fill each tortilla with the mixture and top with your favorite toppings.
