Ingredients
  

Filling
  • 1 can Black Beans rinsed and drained
  • 2 cups Bell Peppers mixed colors, chopped
  • 1 medium Red Onion chopped
  • 1 cup Corn fresh, frozen, or canned
  • 2 tablespoons Olive Oil or avocado oil
  • 1 packet Taco Seasoning or homemade
Tortillas
  • 8 pieces Tortillas corn or flour

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or nonstick spray.
  2. In a large mixing bowl, combine black beans, bell peppers, red onion, corn, olive oil, and taco seasoning. Toss gently.
  3. Spread the veggie mixture evenly on the prepared baking sheet.
  4. Roast in the oven for 20 minutes, stirring halfway through.
  5. While the filling is roasting, warm the tortillas in a skillet or in foil in the oven.
  6. Once the veggies are roasted, fill each tortilla with the mixture and top with your favorite toppings.
  7. Serve warm and enjoy!
