- Place the boneless, skinless chicken breasts at the bottom of your slow cooker without browning them.
- Thinly slice the onion and mince the fresh garlic, then scatter them over the chicken.
- In a bowl, whisk together the creamy peanut butter, soy sauce, coconut milk, and honey until smooth.
- Pour the peanut sauce over the chicken and vegetables in the slow cooker. Gently stir to ensure everything is well-coated.
- Cover the slow cooker and cook on low for 6 hours or high for 3 hours, until the chicken is remarkably tender.
- Once cooked, shred the chicken directly in the pot and serve it over rice or noodles. Garnish with chopped peanuts and green onions.
