Preparation
- Preheat your oven to 350°F (175°C) and grease or line an 8x8-inch baking pan.
- In a mixing bowl, whisk together melted unsalted butter, granulated sugar, eggs, and vanilla extract. Gradually fold in all-purpose flour and unsweetened cocoa powder, mixing until just combined.
- Pour the brownie batter into the prepared baking pan and bake for 20-25 minutes, until a toothpick comes out with moist crumbs.
- In a saucepan over low heat, melt unsalted butter and semi-sweet chocolate chips, stirring until smooth. Remove from heat and mix in sweetened condensed milk and mint extract to create the fudge.
- Pour the mint fudge over the cooled brownies, smoothing it evenly.
- Chill in the refrigerator for at least 2 hours, then slice into squares.
Notes
For extra flair, drizzle melted chocolate on top. Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
