Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line an 8x8-inch baking pan.
  2. In a mixing bowl, whisk together melted unsalted butter, granulated sugar, eggs, and vanilla extract. Gradually fold in all-purpose flour and unsweetened cocoa powder, mixing until just combined.
  3. Pour the brownie batter into the prepared baking pan and bake for 20-25 minutes, until a toothpick comes out with moist crumbs.
  4. In a saucepan over low heat, melt unsalted butter and semi-sweet chocolate chips, stirring until smooth. Remove from heat and mix in sweetened condensed milk and mint extract to create the fudge.
  5. Pour the mint fudge over the cooled brownies, smoothing it evenly.
  6. Chill in the refrigerator for at least 2 hours, then slice into squares.

Notes

For extra flair, drizzle melted chocolate on top. Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
