- Bloom the Gelatin: Soak the gelatin powder in cold water according to the package instructions until it swells and becomes soft—this usually takes about 5-10 minutes.
- Make Blueberry Puree: In a saucepan over medium heat, combine fresh blueberries with granulated sugar. Cook until the blueberries soften, about 5-7 minutes, then blend the mixture until smooth.
- Whip the Cream: In a mixing bowl, whip the heavy cream until soft peaks form. It should be light and fluffy without reaching stiff peaks.
- Combine Ingredients: Gently fold the cooled blueberry puree into the whipped cream along with the bloomed gelatin. Be cautious not to deflate the cream.
- Assemble Cakes: If using a cake base, cut it into small shapes that fit your serving molds. Layer the blueberry mousse over the base.
- Chill and Glaze: Refrigerate the assembled mousse cakes for at least 4 hours or until fully set. Prepare the mirror glaze and pour it over the chilled cakes.
