- Prepare Gelatin: Start by blooming the gelatin in cold water, following the instructions on the package. This step usually takes about 5 minutes and is crucial for a smooth mousse texture.
- Make Blueberry Puree: In a saucepan, cook the fresh blueberries with sugar over medium heat until they soften, roughly 5-7 minutes. Blend the mixture until perfectly smooth, letting it cool slightly before the next step.
- Whip Cream: In a large bowl, beat the heavy cream until soft peaks form—this should take about 2-3 minutes. Be careful not to over-whip.
- Combine Mixtures: Gently fold the cooled blueberry puree and the melted gelatin into the whipped cream.
- Assemble: If using a cake base, layer the blueberry mousse over your sponge cake or cookie crust in individual molds or cups.
- Chill & Glaze: Refrigerate the assembled mini cakes for at least 4 hours, and before serving, pour the prepared mirror glaze gently on top.
