  • 4 cups Water or Broth Chicken or vegetable broth

Preparation Steps
  1. Prepare Your Ingredients: Start by chopping the chicken thighs, onions, carrots, and potatoes into bite-sized pieces.
  2. Sauté the Onions: In a large pot over medium heat, warm some oil and add your chopped onions. Cook them until they're translucent, about 5 minutes.
  3. Brown the Chicken: Add the chicken thighs to the pot and cook until they are browned on all sides, about 5-7 minutes.
  4. Add Vegetables & Liquid: Stir in the chopped carrots and potatoes. Pour enough water or broth to cover them by an inch, and bring to a gentle boil.
  5. Incorporate the Curry Roux: Once boiling, reduce heat and mix in the curry roux. Stir until it dissolves completely.
  6. Simmer to Perfection: Let your curry simmer on low heat for 20-30 minutes to meld the flavors.
  7. Serve & Garnish: Ladle the curry into bowls and garnish with sliced green onions.

Notes

For added crunch, top with a sprinkle of sesame seeds! Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
