- Preheat your oven to 400°F (200°C) to ensure an even cooking process for your flaky crust.
- In a skillet, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté until it's soft and translucent—about 5 minutes.
- Gently lay in the fish fillets and prawns, cooking for approximately 5 minutes until the fish becomes opaque and slightly flaky.
- Pour in the creamy coconut milk, then sprinkle the curry powder over the top. Stir well and let it simmer together for about 3 minutes.
- Add the frozen peas and stir them in, cooking until they’re warmed through—this should take around 2 minutes.
- Spoon the seafood mixture into a baking dish. Roll out the flaky pastry to cover, sealing the edges well and cutting a few slits on top to allow steam to escape.
