Steps
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 chopped onion and cook until soft and translucent, about 5 minutes.
- Stir in 4 sliced carrots and 2 tablespoons of minced ginger. Sauté for an additional 3 minutes until fragrant.
- Pour in 4 cups of vegetable broth and bring the mixture to a boil. Reduce heat to a gentle simmer and cook for 20 minutes.
- Using an immersion blender, puree the soup until smooth. Blend partially if you prefer some texture.
- Stir in the juice of 2 freshly squeezed oranges and 1 cup of coconut milk. Let it simmer on low for about 5 minutes.
- Add salt and pepper to taste. Ladle into warm bowls, garnish with fresh herbs or a sprinkle of orange zest.
Notes
Store leftovers in an airtight container for up to 5 days. For freezing, use airtight containers for up to 3 months.
