Preparation
- Rinse 1 cup of fresh cranberries under cool water, removing any stems or blemishes.
- In a medium saucepan, combine the rinsed cranberries and ½ cup of granulated sugar over medium heat. Cook until they burst and become soft.
- Allow the cooked cranberries to cool slightly, then blend until smooth.
- Whisk together 1 cup of heavy cream, ½ cup of whole milk, and 1 teaspoon of pure vanilla extract. Fold in blended cranberries.
- Cover the mixture and refrigerate for about 2 hours.
- Pour the chilled mixture into the ice cream maker and churn according to instructions.
- Transfer to bowls or cones and serve immediately or freeze for a firmer texture.
Notes
For best flavor, ensure cranberries are cooked until they burst. Use coconut cream and plant-based milk for a vegan option.
