Making the Gougeres
- Preheat your oven to 425°F (220°C). In a medium saucepan, combine the water and butter, bringing it to a gentle simmer over medium heat.
- Once simmering, add the all-purpose flour all at once. Stir vigorously until the mixture forms a smooth ball, pulling away from the sides of the pan, about 1-2 minutes.
- Remove the saucepan from heat, allowing the dough to cool for about 5 minutes.
- Incorporate the eggs one at a time, mixing continuously until the dough turns smooth and glossy.
- Gently fold in your grated cheese, ensuring it’s evenly distributed throughout the dough.
- Scoop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 20-25 minutes until puffed and golden brown.
