Ingredients

For the Dough
  • 1 cup Water Provides moisture to the dough.
  • 1/2 cup Butter Adds richness and aids in puffing.
  • 1 cup All-purpose Flour Forms the structure of the gougeres.
  • 4 large Eggs Create airy texture and bind ingredients.
For the Cheese
  • 1 cup Grated Cheese (e.g., Gruyère or Comté) Provides the signature cheesy flavor.
For Flavor Enhancements
  • Optional Herbs/Spices Such as thyme, rosemary, or cayenne pepper for heat.

Equipment

  • medium saucepan
  • Parchment paper
  • Baking sheet
  • Mixing bowl

Method

Making the Gougeres
  1. Preheat your oven to 425°F (220°C). In a medium saucepan, combine the water and butter, bringing it to a gentle simmer over medium heat.
  2. Once simmering, add the all-purpose flour all at once. Stir vigorously until the mixture forms a smooth ball, pulling away from the sides of the pan, about 1-2 minutes.
  3. Remove the saucepan from heat, allowing the dough to cool for about 5 minutes.
  4. Incorporate the eggs one at a time, mixing continuously until the dough turns smooth and glossy.
  5. Gently fold in your grated cheese, ensuring it’s evenly distributed throughout the dough.
  6. Scoop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 20-25 minutes until puffed and golden brown.

Notes

Gougeres are best enjoyed warm and can be customized with various cheeses and herbs for additional flavor.
