Ingredients
  

For the Whipped Feta
  • 200 g Feta cheese Traditional Greek feta recommended.
  • 60 g Greek yogurt or sour cream Optional but recommended for texture.
  • 2 tbsp Olive oil One for blending, one for roasting.
  • 1 tsp Lemon juice Adds brightness to the feta.
  • Cracked black pepper To taste.
For the Roasted Grapes
  • 1.5 cups Red seedless grapes Can substitute with blackberries or figs.
  • Salt A pinch to enhance flavor.
For the Topping
  • 3 tbsp Walnut halves Toasted for flavor.
  • 1.5 tbsp Hot honey Can substitute with chili flakes mixed with regular honey.
  • Fresh thyme leaves or chili threads Optional garnish.
Served With
  • Warm pita, baguette slices, or seeded crackers Perfect vessels for the dish.

Method
 

Preparation Steps
  1. Preheat your oven to 200°C (about 390°F) and let the feta cheese come to room temperature.
  2. Toss the red seedless grapes with olive oil and a pinch of salt. Spread them out on a baking sheet and roast for 12-15 minutes until blistered and sweet.
  3. In a blender, combine feta cheese, Greek yogurt, olive oil, lemon juice, and cracked black pepper. Blend until smooth and creamy.
  4. Toast the walnut halves in a dry skillet over medium heat for 3-5 minutes until fragrant and golden.
  5. Spoon the whipped feta onto a serving platter, top with roasted grapes and toasted walnuts, and drizzle with hot honey. Garnish with thyme leaves or chili threads if desired.
