  • 4 cups fresh broccoli choose bright green florets
  • 2 medium carrots finely diced
  • 1 medium onion yellow onion preferred
  • 2 cloves garlic minced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour can substitute with gluten-free flour
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese grated
Optional Toppings
  • 1 cup croutons
  • 1 cup extra cheese optional topping

How to Make
  1. Chop the broccoli into bite-sized pieces and finely dice the onion and carrots.
  2. Melt unsalted butter over medium heat in a large pot. Add the diced onions and carrots, and simmer for about 5 minutes.
  3. Stir in minced garlic and let it cook for about a minute. Sprinkle vegetables with flour and stir to coat.
  4. Gradually pour in the chicken broth while stirring continuously. Bring to a gentle simmer and add broccoli. Cook for around 10 minutes.
  5. Reduce heat to low, stir in heavy cream, and gradually add grated cheddar cheese until melted.
  6. Season with salt and pepper to taste. Serve hot with optional toppings.

Notes

For a delightful finish, garnish with freshly cracked black pepper if desired.
