Ingredients
  

For the Sticky Rice
  • 1 cup Glutinous Rice Sushi rice can be used as a substitute.
  • 1 cup Coconut Milk (Full-Fat) Use full-fat for best flavor.
  • 2 tablespoons Sugar Adjust based on mango ripeness.
  • 1/4 teaspoon Salt
For the Mango Layer
  • 2 medium Ripe Mangoes Fresh is best, frozen can be used.
Optional Toppings
  • 2 tablespoons Toasted Mung Beans For garnish.
  • 1 tablespoon Black Sesame Seeds For garnish.

Method
 

How to Make
  1. Soak the rice in cold water for at least 4 hours or overnight.
  2. Drain the rice and steam it for 25-30 minutes until tender.
  3. In a saucepan, heat coconut milk, sugar, and salt over medium-low heat until sugar dissolves.
  4. Transfer rice to a bowl, mix in half the coconut sauce.
  5. Layer the sticky rice and diced mango in jars, finishing with mango on top.
  6. Drizzle remaining coconut sauce on top and garnish, serve or chill.

Notes

For added flavor, drizzle extra coconut sauce just before serving.
