Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Boil the jumbo pasta shells according to package instructions until al dente, about 9-11 minutes. Drain and cool slightly.
  3. In a large skillet, sauté chopped onions and minced garlic until translucent. Add ground beef and cook until browned.
  4. Stir in chopped mushrooms with salt and pepper, cooking until softened, about 5 minutes.
  5. Mix in cream of mushroom soup, sour cream, and Dijon mustard until well-combined and heated through.
  6. Generously spoon the creamy beef mixture into each shell and arrange them in the greased baking dish.
  7. Sprinkle shredded cheese on top and bake uncovered for 25-30 minutes until the cheese is golden and bubbly.

Notes

Allow the stuffed shells to cool slightly before handling them to prevent tearing.
