Preparation Steps
  1. In your Instant Pot, select the sauté setting and melt the butter with olive oil. Add the thinly sliced onions, salt, pepper, and sugar. Cook for about 15 minutes until they are deeply caramelized and golden brown, stirring occasionally.
  2. Stir in the minced garlic and cook for 1 minute until fragrant. Then, pour in the balsamic vinegar and add thyme; mix well to combine all the flavors.
  3. Add your chosen dry pasta, beef broth, and water into the pot, stirring to combine. Secure the lid, set the Instant Pot to manual high pressure, and cook for 5 minutes. Once done, do a quick release of pressure.
  4. Carefully remove the lid and stir in the heavy cream, Gruyère, and Parmesan until melted and creamy, ensuring everything is well combined.
  5. Ladle the delicious pasta into bowls and top with freshly chopped parsley and an additional sprinkle of Parmesan if desired.
