  • 2 cups All-Purpose Flour sifted
  • 1 cup Pistachios shelled, unsalted, crushed
  • 1.5 cups Sugar granulated
  • 1 tablespoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cups Unsalted Butter softened
  • 3 large Eggs at room temperature
  • 1 cup Milk whole
For the Cream Cheese Buttercream
  • 8 ounces Cream Cheese full-fat
  • 4 cups Powdered Sugar sifted
  • 1 teaspoon Vanilla Extract

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease three round cake pans and place a circle of parchment paper at the bottom of each.
  3. In a spacious bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  4. In another bowl, cream the softened unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, then stir in the milk.
  5. Gradually fold the dry ingredients into the wet mixture and gently stir in the crushed pistachios.
  6. Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely on wire racks.
Frosting and Assembly
  1. In a large bowl, whip together the full-fat cream cheese and softened butter until fluffy. Gradually mix in the sifted powdered sugar and vanilla extract.
  2. Layer the cooled cakes, spreading a generous amount of frosting between each layer and frosting the top and sides.
  3. Optional: Decorate with crushed pistachios on top.

Notes

Avoid overmixing the batter for a light cake texture. Allow cakes to cool completely before frosting.
