Cake Preparation
- Preheat your oven to 350°F (175°C).
- Grease three round cake pans and place a circle of parchment paper at the bottom of each.
- In a spacious bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In another bowl, cream the softened unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, then stir in the milk.
- Gradually fold the dry ingredients into the wet mixture and gently stir in the crushed pistachios.
- Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely on wire racks.
Frosting and Assembly
- In a large bowl, whip together the full-fat cream cheese and softened butter until fluffy. Gradually mix in the sifted powdered sugar and vanilla extract.
- Layer the cooled cakes, spreading a generous amount of frosting between each layer and frosting the top and sides.
- Optional: Decorate with crushed pistachios on top.
Notes
Avoid overmixing the batter for a light cake texture. Allow cakes to cool completely before frosting.
