Preparation Steps
- Wash the red potatoes under cool water, keeping the skin on.
- In a large pot, fill with water and add a generous pinch of salt. Bring to a boil and add the potatoes.
- Cook for 15-20 minutes until fork-tender.
- Drain the potatoes and let them sit for about 5 minutes.
- Return the potatoes to the mixing bowl, add the unsalted butter, and pour in the heavy cream while mashing.
- Season with salt and pepper. Optionally mix in the chopped fresh chives.
- Spoon mashed potatoes into a serving dish and garnish with more chives or a pat of butter.
Notes
For a richer flavor, consider adding roasted garlic or cheese. Leftovers can be stored in an airtight container for up to 3 days.
