- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté the ground beef and chopped onion for about 5-7 minutes until browned.
- Stir in the canned chili and drained diced tomatoes into the skillet and simmer for 5 minutes.
- In a large bowl, mix together the cornmeal, milk, eggs, melted butter, baking powder, and salt until smooth.
- In a greased 9x9 inch baking dish, spread the meat mixture evenly, then pour the cornbread batter over it.
- Top with shredded cheddar cheese and bake for 25-30 minutes until golden brown.
- Let it cool briefly for easier serving, optionally add sour cream and green onions before serving.
