For the Cornbread Topping
  • 1 cup Cornmeal Key for texture
  • 1 cup Milk
  • 2 large Eggs
  • 1/4 cup Melted Butter
  • 1 tablespoon Baking Powder Essential for leavening
  • 1/2 teaspoon Salt
For the Topping
  • 1 cup Sharp Cheddar Cheese Can swap for Monterey Jack or spicy pepper jack

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the ground beef and chopped onion for about 5-7 minutes until browned.
  3. Stir in the canned chili and drained diced tomatoes into the skillet and simmer for 5 minutes.
  4. In a large bowl, mix together the cornmeal, milk, eggs, melted butter, baking powder, and salt until smooth.
  5. In a greased 9x9 inch baking dish, spread the meat mixture evenly, then pour the cornbread batter over it.
  6. Top with shredded cheddar cheese and bake for 25-30 minutes until golden brown.
  7. Let it cool briefly for easier serving, optionally add sour cream and green onions before serving.
