- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and chop the sweet potatoes into even bite-sized pieces and toss with salt.
- In a saucepan, combine melted butter, olive oil, lemon juice, lemon zest, and honey; simmer on low for 1 minute.
- Pour the honey-lemon mixture over the sweet potatoes and toss to coat.
- Roast the sweet potatoes on the prepared baking sheet for about 25 minutes until fork-tender.
- Let them cool for a couple of minutes before serving warm.
Notes
Optional: Sprinkle with cinnamon for an extra flavor kick. Store leftovers in an airtight container for up to 3 days.
