Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and chop the sweet potatoes into even bite-sized pieces and toss with salt.
  3. In a saucepan, combine melted butter, olive oil, lemon juice, lemon zest, and honey; simmer on low for 1 minute.
  4. Pour the honey-lemon mixture over the sweet potatoes and toss to coat.
  5. Roast the sweet potatoes on the prepared baking sheet for about 25 minutes until fork-tender.
  6. Let them cool for a couple of minutes before serving warm.

Notes
