How to Make Hearty Italian Sausage Soup
  1. In a large pot over medium heat, add your Italian sausage and cook until browned, breaking it apart with a spoon for about 5-7 minutes.
  2. Mix in the diced onions, garlic, carrots, and celery. Stir them occasionally until softened, about 5 minutes.
  3. Pour in the chicken broth along with the diced tomatoes (with juice). Stir the mixture well and bring it to a gentle simmer.
  4. Sprinkle in the Italian seasoning, salt, and pepper to taste. Allow the soup to simmer on low heat for about 20 minutes.
  5. Just before serving, stir in the fresh spinach until it's wilted, about 1-2 minutes.
