  • 1 large Butternut Squash Halved and deseeded
  • 2 tablespoons Olive Oil Substitute with avocado oil if desired
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Filling
  • 1 cup Quinoa Cooked
  • 2 cloves Garlic Minced
  • 2 cups Spinach Fresh, wilted
  • 1/2 cup Feta Cheese Crumble
  • 1 teaspoon Cinnamon
Optional Drizzle
  • 1 tablespoon Balsamic Reduction For drizzling

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place cut-side down on the prepared baking sheet.
  3. Roast in the oven for 30-35 minutes, until tender and edges caramelize.
  4. In a separate pot, cook quinoa according to package instructions, about 15 minutes. Fluff with a fork and set aside.
  5. In a large bowl, mix cooked quinoa, sautéed garlic, wilted spinach, crumbled feta, and cinnamon until well combined.
  6. Flip roasted squash halves and stuff with quinoa mixture. Return to the oven for 10-15 minutes.
  7. Serve hot, drizzling with balsamic reduction or olive oil as desired.

Notes

Optional: Garnish with fresh herbs like parsley or thyme.
