  • 1/2 cup Pasta Water Reserve before draining pasta.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Halve the Brussels sprouts and cube the butternut squash. Toss them with olive oil and minced garlic.
  3. Spread the seasoned vegetables onto a lined baking sheet and roast for 20-25 minutes until golden brown.
  4. Heat a skillet over medium heat. Cook the Italian sausage for 5-7 minutes until fully cooked and browned.
  5. Boil salted water in a large pot and cook the pasta according to package instructions. Reserve half a cup of pasta water before draining.
  6. In a mixing bowl, combine the roasted veggies, cooked sausage, and pasta. Add reserved pasta water gradually until desired consistency is reached.
  7. Optional: Top with freshly grated Parmesan cheese if desired.

Notes

Consider fresh herbs like thyme or rosemary for added flavor. Leftovers can be transformed into soups or casseroles.
