- Preheat your oven to 400°F (200°C).
- Halve the Brussels sprouts and cube the butternut squash. Toss them with olive oil and minced garlic.
- Spread the seasoned vegetables onto a lined baking sheet and roast for 20-25 minutes until golden brown.
- Heat a skillet over medium heat. Cook the Italian sausage for 5-7 minutes until fully cooked and browned.
- Boil salted water in a large pot and cook the pasta according to package instructions. Reserve half a cup of pasta water before draining.
- In a mixing bowl, combine the roasted veggies, cooked sausage, and pasta. Add reserved pasta water gradually until desired consistency is reached.
- Optional: Top with freshly grated Parmesan cheese if desired.
