How to Make Hearty Comforting Mushroom Bok Choy Soup
- Start by cleaning and slicing your fresh mushrooms. Chop the bok choy into bite-sized pieces and mince the garlic and ginger.
- In a large pot, heat a splash of olive oil over medium heat. Sauté the minced garlic and ginger for about 2 minutes, until fragrant.
- Add the sliced mushrooms to the pot and cook for approximately 5 minutes, stirring occasionally, until softened and browned.
- Pour in the vegetable broth and soy sauce. Bring to a boil, then reduce heat and let it gently simmer for 10 minutes.
