How to Make Hearty Comforting Mushroom Bok Choy Soup
  1. Start by cleaning and slicing your fresh mushrooms. Chop the bok choy into bite-sized pieces and mince the garlic and ginger.
  2. In a large pot, heat a splash of olive oil over medium heat. Sauté the minced garlic and ginger for about 2 minutes, until fragrant.
  3. Add the sliced mushrooms to the pot and cook for approximately 5 minutes, stirring occasionally, until softened and browned.
  4. Pour in the vegetable broth and soy sauce. Bring to a boil, then reduce heat and let it gently simmer for 10 minutes.
  5. Add the chopped bok choy and cook for the last 5 minutes, until vibrant and crunchy.
  6. Ladle your soup into bowls and garnish with toasted sesame seeds or sliced green onions if desired.

Notes

For an extra kick, add a sprinkle of chili flakes. Store leftovers in an airtight container for up to 3 days.
