  • 1 teaspoon baking soda ensure it's fresh for optimal results
  • 1/2 cup melted coconut oil can replace with unsalted butter or other oils
  • 1/2 cup honey or maple syrup coconut sugar may also be used—adjust dry ingredients if using liquid sweeteners
  • 1 cup grated carrots freshly grated carrots ensure moisture and flavor
  • 1 cup chocolate chips dark chocolate or white chocolate can be used for variation

How to Make
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together whole wheat flour and baking soda in a large bowl until well combined.
  3. Combine melted coconut oil with honey (or maple syrup) in a separate bowl, then add grated carrots.
  4. Fold the wet ingredients into the dry mixture, gently incorporating the chocolate chips at the end.
  5. Drop generous mounds of dough onto your prepared baking sheet, spacing them about two inches apart.
  6. Bake for 12-15 minutes until golden brown and slightly firm to the touch.
  7. Cool the cookies on the baking sheet for five minutes before transferring them to wire racks.

Notes

Optional: Sprinkle with a dash of sea salt for a delightful contrast! Use fresh ingredients for the best results.
