  • 8 oz Shell Pasta or Gluten-Free Pasta
For the Cheese
  • 1 cup Monterey Jack Cheese shredded
  • 1 cup Mild Cheddar Cheese shredded
  • 1 cup Pepper Jack or Mozzarella optional
  • 1 cup Sharp Cheddar optional

How to Make One Pot Cheesy Taco Pasta
  1. In a large pot or Dutch oven over medium heat, cook ground beef with ground cumin, dried minced onion, and garlic powder until browned. Drain excess fat if needed.
  2. Stir in tomato paste, diced tomatoes with green chilies, vegetable broth, and whole milk. Bring the mixture to a gentle boil.
  3. Add shell pasta and simmer on medium-low heat until the pasta is tender, following package instructions.
  4. Lower the heat and stir in shredded Monterey Jack and mild cheddar cheese until melted and creamy.
