  • 4 cloves Garlic Minced
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Salt Himalayan or sea salt suggested
  • 1 teaspoon Pepper
For the Vegetables
  • 1 pound Baby Carrots Can substitute with regular carrots
For the Fresh Herbs
  • 1 tablespoon Thyme Fresh preferred
  • 1 tablespoon Rosemary Fresh preferred

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Coat chicken breasts with olive oil, then add minced garlic, thyme, rosemary, salt, and pepper. Mix well.
  3. On a baking sheet, spread the seasoned chicken and baby carrots in a single layer.
  4. Bake for about 30 minutes until the chicken's internal temperature reaches 165°F (75°C) and the carrots are fork-tender.
  5. Transfer to a serving plate and sprinkle with chopped parsley. Optional: add lemon juice before serving.
