Method
 

  1. Bring a large pot of salted water to boil. Add the gnocchi and cook for 2-3 minutes until they float to the surface. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and lightly golden.
  3. Stir in the fresh spinach and cook for 3 minutes, or until it wilts down, turning a vibrant green hue.
  4. Pour in the heavy cream, bringing it to a gentle simmer. Allow it to bubble for about 5 minutes until it thickens slightly.
  5. Add the cooked gnocchi and crumbled feta cheese to the sauce, tossing gently to coat the gnocchi evenly while maintaining their softness.
  6. Taste and season with salt, pepper, and optional red pepper flakes. Serve immediately, garnished with a sprinkle of extra feta on top.

Notes

For best flavor, make the creamy sauce right before combining with the gnocchi. Consider freezing the gnocchi without the sauce for optimal texture.
