For the Haddock
  • 4 fillets Haddock substitute with cod or sole if desired
For the Breadcrumb Mixture
  • 1 cup Fresh breadcrumbs use panko for extra crispiness
  • 1 tablespoon Lemon zest fresh lemon juice can be added
  • 2 tablespoons Flat-leaf parsley basil or mint can be used as substitutes
  • 1 tablespoon Chives green onions can be used instead
  • 1 teaspoon Fresh thyme or use dill or tarragon
  • 2 cloves Garlic minced; garlic powder can be used as a substitute
  • 3 tablespoons Unsalted butter melted; replace with olive oil for a lighter version
  • 2 tablespoons Olive oil
  • 1 teaspoon Sea salt adjust to taste
  • 1 teaspoon Black pepper adjust to taste
For Serving
  • 1 lemon Lemon wedges squeeze fresh juice on top for added flavor

Method
 

Preparation Steps
  1. Preheat the oven to 400°F.
  2. Pat dry the haddock fillets using a paper towel.
  3. Mix fresh breadcrumbs, lemon zest, parsley, chives, thyme, minced garlic, melted butter, olive oil, salt, and pepper in a mixing bowl.
  4. Spread the breadcrumb mixture generously over the haddock fillets.
  5. Bake in the preheated oven for about 20 minutes.
  6. Broil for 1 minute if a golden-brown crust is desired.
  7. Serve immediately with lemon wedges and your favorite side dishes.
