Ingredients
  

Tempura Batter
  • 1 cup Tempura Mix Store-bought options work great for convenience.
  • 1 cup All-Purpose Flour Can substitute with gluten-free flour.
  • 1 cup Corn/Potato Starch Cornstarch can replace potato starch.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Baking Powder Ensure it's fresh for best results.
  • 1 cup Ice Cold Water Warm water is a no-go!
Vegetables
  • 2 cups Assorted Vegetables E.g., bell peppers, zucchini, carrots, sliced uniformly.
Dipping Sauce
  • 1/2 cup Bonito Soy Sauce Use regular soy sauce for vegetarian.
  • 1 tablespoon Sugar Adjust sweetness to liking.
For Frying
  • 4 cups Oil for Frying Use vegetable or canola oil.

Method
 

Preparation
  1. Slice assorted vegetables into uniform pieces and pat dry with a paper towel.
  2. In a mixing bowl, combine tempura mix, flour, cornstarch, salt, baking powder, and ice-cold water. Mix gently.
  3. Pour oil into a medium pot and heat it to around 400°F.
  4. Dip vegetables into batter and fry in small batches for 3-5 minutes until golden brown.
  5. Mix bonito soy sauce with water and heat until boiling. Remove from heat and stir in sugar.

Notes

Serve immediately for best crispiness. Optionally sprinkle with sesame seeds.
