  • 1 cup Warm Water 110°F
  • 2 teaspoons Active Dry Yeast Fresh yeast yields better results

  • 1 teaspoon Salt
For the Topping
  • 3 tablespoons Za’atar Spice Blend Optional homemade mix can include thyme, sumac, sesame seeds, and salt
  • 2 tablespoons Extra Olive Oil To mix with za’atar for the topping

Method
 

Preparation
  1. Mix warm water and active dry yeast in a bowl and let sit for 5-10 minutes until frothy.
  2. Add all-purpose flour, salt, and olive oil to the yeast mixture. Stir until a sticky dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot for 30-45 minutes.
  5. Combine za’atar spice blend with extra olive oil to make a spreadable paste.
  6. Punch down the risen dough, divide into portions, and roll each into a ¼ inch thick disc.
  7. Preheat the oven to 475°F (245°C), ensuring your baking surface is hot.
  8. Transfer the discs to the surface, spread za’atar mixture on top, and bake for 10-12 minutes.
  9. Cool on a wire rack before serving.

Notes

Optional: Sprinkle with extra za’atar after baking for added flavor. Store leftovers in an airtight container.
