  • 1 block firm or extra-firm tofu pressed and sliced
  • 1 cup Panko bread crumbs use gluten-free if needed
  • 1/2 cup flour use gluten-free flour as an alternative
  • 1 large egg or flax egg for vegan substitute
  • 1 cup vegetable oil for frying
For the Curry Sauce
  • 1 large onion sliced, sweet onions preferred
  • 2 cloves garlic minced
  • 2 tablespoons curry powder
  • 1 can coconut milk
  • 1 cup vegetable broth use low-sodium
  • 2 medium carrots optional, diced
  • 2 medium potatoes optional, diced

Method
 

Preparation
  1. Press and Prepare Tofu: Start by pressing the tofu between paper towels for about 30 minutes to remove excess moisture.
  2. Cut and Coat Tofu: Slice the pressed tofu into half-inch slabs and coat in flour, then egg, and finally panko breadcrumbs.
  3. Fry Until Golden: Heat vegetable oil in a pan over medium heat and fry the breaded tofu slabs for 3-4 minutes on each side until golden brown.
Cooking
  1. Make Curry Sauce: In another pan, sauté sliced onions until translucent, add minced garlic and curry powder, then stir in coconut milk and vegetable broth.
  2. Combine and Simmer: Add the fried tofu into the curry sauce and let it soak for about 5 minutes.
  3. Serve It Up: Serve over rice or quinoa with additional curry sauce drizzled on top.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to maintain crispness of tofu.
