Ingredients
  

For the Tofu
  • 1 block Firm or Extra-Firm Tofu Press to remove excess moisture
  • 1 cup Panko Bread Crumbs
For the Curry Sauce
  • 2 tablespoons Curry Powder Adjust based on heat preference
  • 1 can Coconut Milk
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 cup Vegetable Broth Low-sodium preferred
  • 2 tablespoons Soy Sauce Low-sodium if desired
Optional Add-Ins
  • 1 cup Extra Vegetables e.g., bell peppers or zucchini

Method
 

Preparation
  1. Press and Prepare Tofu by placing it between paper towels or using a tofu press for about 30 minutes.
  2. Cut and Coat Tofu by slicing into half-inch slabs, dipping in flour, plant-based egg substitute, and coating with panko.
  3. Fry Until Golden by heating oil over medium heat and frying coated tofu slices for 3-4 minutes on each side.
  4. Make Curry Sauce by sautéing diced onion until translucent, then adding minced garlic and curry powder followed by coconut milk and vegetable broth.
  5. Combine and Simmer by adding golden tofu to the sauce and allowing to soak for about 5 minutes.
  6. Serve It Up by plating the tofu over steamed rice or quinoa and drenching with curry sauce.

Notes

For extra flavor, garnish with fresh herbs or sesame seeds.
