Instructions
  1. In a bowl, season 1 pound of ground chicken with garlic powder, paprika, salt, and black pepper. Cook the mixture in a skillet over medium heat until it’s browned and crumbled, about 7-10 minutes.
  2. In a separate pan, sprinkle shredded mozzarella or jack cheese in small circles. Cook on medium heat until the cheese is melted and golden, about 3-4 minutes, creating a crispy cheese lace.
  3. Warm your small tortillas in a dry skillet or microwave until pliable, usually around 30 seconds in the microwave.
  4. In a bowl, combine cottage cheese, ranch seasoning, and a squeeze of lemon juice to create a creamy ranch sauce. Blend until smooth and creamy.
  5. Layer the chicken filling onto the warm tortillas. Top each taco with a piece of crispy cheese lace, chopped dill pickles, shredded cabbage, and a drizzle of ranch sauce. Finish with a splash of pickle brine.
