  • 1 cup Orzo Pasta can substitute with rice or quinoa
  • 2 cups Spinach can substitute with kale or Swiss chard

  • 1 cup Feta Cheese can substitute with goat cheese or nutritional yeast
  • 2 cloves Garlic fresh garlic preferred
  • 1 small Onion can substitute with shallots
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 teaspoon Dill fresh dill is best
  • 2 cups Chicken Broth use vegetable broth for vegetarian version
  • 1 tablespoon Lemon Juice/Zest can substitute with lime juice

How to Make Greek Orzo
  1. Heat a splash of olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, stirring until they become translucent and fragrant, about 3-4 minutes.
  2. Stir in the orzo pasta, lightly toasting it for 1-2 minutes. Then, pour in the chicken or vegetable broth, bringing the mixture to a gentle simmer. Cook for about 10-12 minutes or until orzo is tender and absorbs most of the liquid.
  3. Gently fold in the fresh spinach. Stir and let it wilt into the warm pasta, which should take around 2-3 minutes.
  4. Remove from heat and stir in the crumbled feta cheese and fresh dill, allowing flavors to combine.
  5. Just before serving, drizzle with freshly squeezed lemon juice and zest to enhance flavor.

Consider garnishing with extra dill or a sprinkle of black pepper for added flavor.
