How to Make Greek Orzo
- Heat a splash of olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, stirring until they become translucent and fragrant, about 3-4 minutes.
- Stir in the orzo pasta, lightly toasting it for 1-2 minutes. Then, pour in the chicken or vegetable broth, bringing the mixture to a gentle simmer. Cook for about 10-12 minutes or until orzo is tender and absorbs most of the liquid.
- Gently fold in the fresh spinach. Stir and let it wilt into the warm pasta, which should take around 2-3 minutes.
- Remove from heat and stir in the crumbled feta cheese and fresh dill, allowing flavors to combine.
- Just before serving, drizzle with freshly squeezed lemon juice and zest to enhance flavor.
