  • 2 stalks Celery diced
For the Pasta and Finish
  • 1 cup Orzo Pasta or quinoa for gluten-free
  • 2 tablespoons Lemon Juice freshly squeezed

  • 1 cup Dill or Parsley fresh, chopped

Preparation
  1. Start by dicing the chicken breast into bite-sized pieces and chopping the garlic, carrots, and celery.
  2. Heat a generous splash of olive oil in a large pot over medium heat. Add the garlic, carrots, and celery, sautéing for about 5 minutes until they become fragrant and tender.
  3. Add your diced chicken to the pot along with the chicken broth. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking, and let it bubble away for around 5-7 minutes.
  4. Stir in the orzo pasta along with some salt and pepper. Reduce the heat to low and let it simmer for about 10 minutes, or until the orzo is tender.
  5. Just before serving, stir in the fresh lemon juice and plenty of chopped dill or parsley.
  6. Ladle the comforting soup into bowls and garnish with extra herbs if desired.
