Preparation
- Start by dicing the chicken breast into bite-sized pieces and chopping the garlic, carrots, and celery.
- Heat a generous splash of olive oil in a large pot over medium heat. Add the garlic, carrots, and celery, sautéing for about 5 minutes until they become fragrant and tender.
- Add your diced chicken to the pot along with the chicken broth. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking, and let it bubble away for around 5-7 minutes.
- Stir in the orzo pasta along with some salt and pepper. Reduce the heat to low and let it simmer for about 10 minutes, or until the orzo is tender.
- Just before serving, stir in the fresh lemon juice and plenty of chopped dill or parsley.
- Ladle the comforting soup into bowls and garnish with extra herbs if desired.
