For the Chicken
  • 4 pieces Chicken Breasts Chicken thighs can enhance flavor.
  • 1/4 cup Maple Syrup Honey is a suitable substitute.
  • 2 tablespoons Dijon Mustard Whole grain mustard can be used.
For the Base
  • 2 cups Quinoa or Brown Rice Cooked leafy greens can be a lighter option.
For Garnishing
  • 1/4 cup Fresh Herbs Parsley or cilantro; customize with other herbs.

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes. Toss them with olive oil, garlic powder, salt, and pepper.
  3. Spread the seasoned sweet potato cubes on a baking sheet and roast for 25–30 minutes, stirring halfway.
  4. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper for the marinade.
  5. Coat the chicken breasts in the marinade and let marinate for at least 15 minutes.
  6. Heat a skillet over medium heat and cook the marinated chicken for 6–7 minutes on each side until golden brown.
  7. Prepare quinoa or brown rice as per package instructions while the chicken cooks.
  8. Slice the cooked chicken. Assemble bowls by layering quinoa or rice, topped with roasted sweet potatoes and chicken, finished with fresh herbs.
  9. Optional: Drizzle extra maple syrup over the bowls before serving.
