How to Make Chewy Comforting Oatmeal Raisin Cookies
- Preheat your oven to 350°F (175°C) to ensure even baking.
- Cream together 1 cup of softened unsalted butter with 1 cup of brown sugar and 1/2 cup of granulated sugar for about 2 minutes.
- Beat in 2 large eggs and 1 teaspoon of vanilla extract until smooth.
- Whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon; gradually mix this into the wet ingredients.
- Gently fold in 3 cups of old-fashioned rolled oats and 1 cup of plump raisins.
- Drop rounded tablespoons of cookie dough onto lined baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until edges are golden brown.
- Let cool on the baking sheet for 5 minutes before transferring to wire racks.
Notes
Optional: Drizzle with honey for added sweetness. Soak raisins beforehand for a juicier texture.
