How to Make
- Preheat your oven to 375°F (190°C) and prepare a muffin tin.
- In a large mixing bowl, whisk together the all-purpose flour, coconut sugar, baking powder, and a pinch of salt.
- In a separate bowl, mix the almond milk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in chopped strawberries.
- Spoon the batter into muffin cups, filling them about three-quarters full. Top with additional strawberry chunks.
- Bake for 20-25 minutes until golden brown. Cool in the pan for 5 minutes before transferring to a wire rack.
