- In a large pot over medium heat, brown the ground beef or sausage until fully cooked and drain excess fat.
- Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
- Pour in the canned tomatoes and sprinkle in the Italian seasoning. Allow to simmer for 10 minutes.
- Stir in your chosen pasta, cover with broth or water, bring to a boil, then reduce to a simmer, cooking until the pasta is tender.
- Gently stir in the ricotta cheese, then top with shredded mozzarella. Let melt into the soup.
- Ladle the soup into bowls, garnishing with extra cheese or fresh basil.
