Cooking Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add 2 boneless chicken breasts to the skillet. Sear for about 5 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F).
- Sprinkle in 2 minced garlic cloves right after flipping the chicken.
- Pour in ½ cup of chicken broth and 2 tablespoons of lemon juice. Stir gently and scrape up any browned bits from the bottom of the pan.
- Add ¼ cup of cream to the skillet and stir until combined, allowing the sauce to thicken slightly over a simmer (3-4 minutes).
- Sprinkle with salt, pepper, and fresh herbs to taste.
- While the sauce simmers, quickly steam frozen vegetables or cook rice/quinoa to serve alongside your chicken.
